Why desi food calories vary

Oil, ghee, portion size, home versus restaurant cooking, meat cuts, sugar and milk in drinks, and regional recipes all change the final number. That is why some dishes show a typical value plus an estimated range.

Familiar serving sizes

  • Roti — one medium handmade flatbread, about 35–45 g cooked.
  • Katori — a small bowl often used for dal, sabzi or rice.
  • Cup — a regular tea or milk cup, about 150–240 ml depending on the drink.
  • Plate — a regular meal plate, not a banquet serving.
  • Piece — one standard street-food or sweet unit.
  • Teaspoon / tablespoon — useful for ghee, oil, sugar and honey extras.

  • Source matched (USDA matched on cards) — linked to USDA FoodData Central with an FDC id, URL and local per-100g extract scaled to the serving grams. Used for egg, banana, mango, apple, steamed white rice, plain dahi/yogurt proxy, ghee proxy, butter and cooking oil.
  • Recipe calculated — reproducible from ingredient weights, yield and serving count.
  • Professionally reviewed — checked by a named reviewer with a review date (not yet claimed).

NRIOL and similar lists are used only as coverage seeds. Their calorie numbers are not copied as authoritative. Home wheat roti is intentionally not USDA-matched to commercial flatbread FDC rows.

Food images are local WebP assets (160 / 320 / 640). Placeholders are layout-only and are not clickable calculator cards.
